Blackened Salmon Stuffed with Spinach & Parmesan

Ingredients

For the Blackened Seasoning:
• 2 tsp smoked paprika
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp dried oregano
• ½ tsp dried thyme
• ½ tsp cayenne pepper (adjust for heat preference)
• ½ tsp salt
• ¼ tsp black pepper

For the Salmon:
• 4 salmon fillets (6 oz each, skinless)
• 1 tbsp olive oil

For the Stuffing:
• 1 tbsp olive oil
• 3 garlic cloves, minced
• 2 cups fresh spinach, chopped
• ½ cup cream cheese, softened
• ½ cup Parmesan cheese, grated
• ¼ tsp salt
• ¼ tsp black pepper
• 1 tsp lemon zest

Instructions

1. Prepare the Blackened Seasoning:
In a small bowl, mix the smoked paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, salt, and black pepper.
2. Prepare the Stuffing:
In a skillet, heat 1 tbsp olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the chopped spinach and cook until wilted (about 2 minutes).
Remove from heat and stir in the cream cheese, Parmesan, salt, black pepper, and lemon zest until well combined.
3. Stuff the Salmon:
Slice each salmon fillet lengthwise to create a pocket (do not cut all the way through).
Stuff each fillet with a generous spoonful of the spinach and Parmesan mixture.
4. Season the Salmon:
Rub the blackened seasoning over the top and sides of each stuffed salmon fillet.
5. Cook the Salmon:
Heat 1 tbsp olive oil in a skillet over medium-high heat. Add the salmon fillets and cook for 4-5 minutes on each side, or until the salmon is golden brown and cooked through.
6. Serve:
Garnish with fresh parsley and serve with lemon wedges for an extra burst of flavor. This dish pairs perfectly with rice, mashed potatoes, or a fresh green salad.
