Brownie Base
1/2 cup (1 stick) unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 tsp salt
1/4 tsp baking powder
Banana Mousse Layer
2 ripe bananas (medium, mashed)
2 tbsp lemon juice (to prevent browning)
1/3 cup granulated sugar
1 tsp vanilla extract
1 packet (1 tbsp) unflavored gelatin
2 tbsp cold water (for blooming gelatin)
1 cup heavy whipping cream (cold)
Optional Topping
Shaved chocolate or cocoa powder
Banana slices (add just before serving)

Step 1: Make the Brownie Base
Preheat oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) pan with parchment paper.
In a mixing bowl, whisk together melted butter, sugar, eggs, and vanilla until smooth.
Add cocoa powder, flour, salt, and baking powder. Stir until just combined.
Pour batter into the prepared pan and spread evenly.
Bake for 20–25 minutes until a toothpick comes out with a few moist crumbs. Cool completely.
Step 2: Prepare Banana Mousse
In a small bowl, mash bananas and mix with lemon juice, sugar, and vanilla. Set aside.
In another small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.
Gently warm the gelatin mixture (microwave 10–15 seconds or use a small saucepan) until completely dissolved. Stir into banana mixture.
Whip heavy cream to stiff peaks. Gently fold whipped cream into the banana mixture until smooth and fluffy.
Step 3: Assemble & Chill
Pour banana mousse over the cooled brownie base.
Smooth the top and refrigerate for at least 4 hours, or overnight, until set.
Step 4: Serve
Cut into bars using a sharp knife (wipe between cuts for clean edges).
Garnish with banana slices, chocolate curls, or a dusting of cocoa powder.
