Ingredients
1 cup all-purpose flour
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
1 tsp vanilla extract
1/2 cup mashed ripe bananas (about 1 large banana)
1 cup old-fashioned rolled oats
1/2 cup chopped walnuts (optional)
1/2 cup chocolate chips (optional)
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.
In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg and vanilla, then mix in the mashed banana until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in oats, walnuts, and chocolate chips, if using.
Drop tablespoon-sized balls of dough onto the baking sheet, spacing them 2 inches apart.
Bake for 10-12 minutes, until edges are lightly golden. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
