Baked Spinach Mushroom HOT HONEY Quesadillas – Easy Tips

Ingredients

For the filling
2 cups fresh spinach
1½ cups mushrooms (sliced)
1 tbsp olive oil
2 cloves garlic (minced)
Salt & pepper
For the quesadillas
4 large tortillas
1½ cups shredded cheese (mozzarella, cheddar, or mix)
1 tbsp olive oil or melted butter
For the hot honey
3 tbsp honey
1 tsp chili flakes (or chili paste)
½ tsp apple cider vinegar
Optional
Feta crumbles (for extra tang)
Fresh herbs (parsley or cilantro)

Instructions

Preheat oven to 200°C
In a pan, heat olive oil
Sauté mushrooms for 5–6 minutes until golden
Add garlic and spinach
Cook until spinach wilts
Season with salt and pepper, then set aside
Place tortillas on a baking tray
Sprinkle cheese on one half of each tortilla
Add spinach mushroom filling, then more cheese on top
Fold tortillas over and lightly brush with oil or butter
Bake for 10–15 minutes, flipping halfway, until golden and crispy
In a small bowl, mix honey, chili, and vinegar
Slice quesadillas and drizzle with hot honey
Finish with optional feta and herbs
Serve warm and crispy
