Ingredients
4 salmon fillets (about 150–180g each)
2 bell peppers (red and yellow), sliced
1 large onion, sliced
2 tbsp olive oil
1 tsp paprika
1 tsp ground cumin
1 tsp garlic powder
½ tsp chili powder
½ tsp oregano
1 tsp salt
½ tsp black pepper
Juice of 1 lime
Warm tortillas
Avocado slices
Sour cream or Greek yogurt
Fresh cilantro
Lime wedges
Salsa
Instructions
Preheat oven to 220°C (425°F).
Line a large baking tray with parchment paper.
Place sliced peppers and onions on the tray.
Drizzle with 1 tablespoon olive oil.
Sprinkle with half of the seasoning mix and toss well.
Place salmon fillets on the tray beside the vegetables.
Drizzle with remaining olive oil.
Season with the remaining spice mixture.
Bake for 12–15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
Squeeze fresh lime juice over everything.
Garnish with chopped cilantro.
