Ingredients

1 slice of bread (whole grain or sourdough works best)
1 ripe Avocado
1 egg
Salt, to taste
Black pepper, to taste
Red chili flakes (optional)
Fresh coriander or parsley, chopped
2–3 slices of Tomato
1 tsp butter or oil
Instructions
1. Toast the Bread
Toast the bread slice until golden and crisp.
2. Prepare the Avocado Spread
Mash the avocado in a bowl with a pinch of salt and pepper until slightly creamy.
3. Cook the Egg
Heat butter or oil in a pan and fry the egg (sunny-side up works perfectly). Cook until the white is set but the yolk stays runny.
4. Assemble the Toast
Spread the mashed avocado evenly over the toasted bread. Place the fried egg on top.
5. Garnish & Serve
Sprinkle chili flakes, herbs, salt, and pepper. Add tomato slices on the side or on top
