Asian Cucumber and Carrot Salad

Ingredients

Scale

1 tablespoon soy sauce

2 tablespoons chopped scallions

2 large cucumbers, thinly sliced

1 tablespoon sesame oil

1 teaspoon grated fresh ginger

1 garlic clove, minced

2 tablespoons rice vinegar

1 teaspoon sugar

1 tablespoon sesame seeds

2 medium carrots, julienned

1 teaspoon chili flakes (optional)

Instructions

Toss cucumbers and carrots in a large bowl.

In a small bowl, mix vinegar, soy sauce, sesame oil, sugar, garlic, ginger, and chili flakes.

Pour the dressing over the veggies and mix well.

Top with scallions and sesame seeds.

Chill for 10–15 minutes before serving
