Easy and Refreshing Apple Cucumber Salad

Ingredients

For the Salad:

1 large cucumber, thinly sliced

1 apple (Granny Smith or Honeycrisp), thinly sliced

¼ red onion, thinly sliced (optional, for extra bite)

2 tbsp fresh parsley or mint, chopped

¼ cup feta cheese, crumbled (optional, for a creamy contrast)

¼ cup chopped walnuts or almonds (optional, for extra crunch)

For the Dressing:

2 tbsp fresh lemon juice

1 tbsp olive oil

1 tsp honey or maple syrup

½ tsp Dijon mustard (for depth of flavor)

Salt & black pepper to taste

Instructions

1. Prepare the dressing: In a small bowl, whisk together lemon juice, olive oil, honey, Dijon mustard, salt, and black pepper. Set aside.

2. Assemble the salad: In a large bowl, combine the sliced cucumber, apple, red onion, and fresh herbs.

3. Toss everything together: Drizzle the dressing over the salad and gently toss to coat.
