Ingredients
– 2 eggs
– ½ cup sugar
– ½ cup plain yogurt (or milk)
– ¼ cup vegetable oil
– 1 tsp vanilla extract
– 1 cup all-purpose flour
– 1 tsp baking powder
– Pinch of salt
– Optional: zest of ½ lemon or orange for a citrus twist
– Topping: powdered sugar, jam swirl, or chocolate chips
Instructions
1. Preheat & Prep
Heat oven to 180°C (350°F). Grease a small cake pan or line with parchment.
2. Mix Wet Ingredients
In a bowl, whisk eggs, sugar, yogurt, oil, and vanilla until smooth.
3. Add Dry Ingredients
Sift in flour, baking powder, and salt. Stir gently until just combined. Don’t overmix!
4. Customize & Pour
Add zest or toppings if desired. Pour into pan and smooth the top.
5. Bake Fast
Bake for 12–15 minutes or until golden and a toothpick comes out clean.
6. Cool & Serve
Let cool slightly. Dust with powdered sugar or drizzle with honey. Serve warm or chilled!
