Best Potato Salad

Ingredients

Best Potato Salad
Ingredients:
4 large russet potatoes, peeled and cubed
1/2 cup mayonnaise
1/4 cup sour cream
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
1 tsp salt (or to taste)
1/2 tsp black pepper
1/2 tsp paprika (optional)
2 hard-boiled eggs, chopped
1 small red onion, finely diced
2 celery stalks, finely chopped
1/4 cup fresh parsley, chopped
1 tbsp fresh dill (optional)

Instructions

Directions:
Bring a large pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 10-12 minutes. Drain and let them cool slightly.
In a large mixing bowl, combine the mayonnaise, sour cream, Dijon mustard, apple cider vinegar, salt, and pepper. Stir until smooth.
Once the potatoes have cooled slightly, add them to the dressing mixture and gently toss to coat.
Add the chopped eggs, red onion, celery, parsley, and dill (if using), and toss everything together until well combined.
Sprinkle with paprika on top for a little extra flavor and color (optional).
Chill the potato salad in the refrigerator for at least 1-2 hours before serving. Enjoy!
