3 to 3 ½ cups powdered sugar

Preheat oven to 375°F (190°C). Grease and flour two 8-inch round cake pans.
Prepare the Cake: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a large bowl, cream the butter and sugar until light and fluffy. Add the egg and egg yolk, one at a time, beating well after each addition. Mix in the vanilla extract. Add the mashed bananas and mix until combined. Alternately add the flour mixture and buttermilk to the banana mixture, beginning and ending with the flour mixture. Mix until just combined.
Bake: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Prepare the Frosting: In a large bowl, beat the butter and cream cheese until smooth. Mix in the vanilla extract and maple syrup. Gradually add the powdered sugar, one cup at a time, until the frosting reaches your desired consistency.
Assemble the Cake: Place one cake layer on a serving plate. Spread a layer of cream cheese frosting over the top. Place the second cake layer on top and frost the top and sides of the cake. Garnish with pecans or walnuts, if desired.
