These frozen cookie sandwiches are crazy easy to make, and even easier to devour. Soft-baked chocolate chip cookies get filled with a fluffy marshmallow cheesecake filling, rolled in graham cracker crumbs, and drizzled with melty chocolate. Keep them stashed in the freezer all summer long!

1 (16 oz) package chocolate chip cookie dough

8 oz cream cheese, softened

¼ cup powdered sugar

1 tsp vanilla extract

1 cup marshmallow fluff

½ cup crushed graham crackers

½ cup chocolate chips (for drizzling)
Let’s Make Them!
1️⃣ Bake the Cookies
Preheat oven to 350°F.
Bake the chocolate chip cookie dough according to the package instructions.
Cool completely—you don’t want melted filling!
2️⃣ Make the Fluffy Filling
In a mixing bowl, beat together cream cheese, powdered sugar, and vanilla until smooth.
Gently fold in the marshmallow fluff until well combined and creamy.
3️⃣ Assemble the Sandwiches
